Crispy Chicken and Mandarin Salad

Crispy chicken and mandarin salad
Holy delicious, batman!

Martina and I found a recipe a few weeks ago, slightly tweaked it for ourselves and what we have is this incredible salad, that’s very good for you and that we don’t tire of. Here goes:

Makes 4 servings

Salad:

As much spinach as you want
Two carrots (or 8-10 baby carrots) peeled into small strips
A quarter of a head of red cabbage
A few green onions
Sesame seeds to dress (add some black ones for extra fanciness)
Four small orange fruits of your choice (tangerines, mandarins, clementines or satsumas), or two oranges.

Dressing:

¼ cup safflower oil
¼ cup lemon juice
¼ cup soy sauce (or Bragg’s)
1 Tbsp agave nectar (or honey)
1 Tbsp rice vinegar
1 Tbsp sesame oil

To top:

1 bag of Gardein Crispy Tenders (or chicken for you meat-eaters)
1 bag of wontons

Add salad elements to bowl in order listed. Mix the dressing well in a bowl and drizzle equally over each salad. Cook the crispy tenders until nice and crispy. Cut into small pieces and throw onto salad along with some wontons. Boom!
